Octopus in the Oven with Caramelized Lentils

Ingredients

For the Lentils:

  • 500 grams lentils, cooked
  • 100 grams orange juice
  • Orange zest
  • 40 grams carob honey or petimezi (grape molasses)
  • 1 ½ tsp star anise powder
  • 50 grams green onion
  • 1 tbsp dill, finely chopped
  • 1 tsp salt
  • 1 ½ tsp cumin
  • Place the lentils in a saucepan along with the carob honey and the spices until caramelised. Remove it from heat, set aside to cool and add the herbs and the orange juice to simmer.

For The Octopus:

  • 1 kg octopus (partially thawed)
  • 4 bay leaves
  • 100 grams olive oil
  • 100 ml water
  • salt & pepper

Preparation

Place the octopus in a pan, add in all the ingredients, cover with the bay leaves and cook in preheated oven at 180 degrees for an hour.
