Ingredients (4 servings)
- 700 grams Arrow Squid Whole Cleaned NZ
- 400 grams pearl onions for stew, peeled
- 30 grams olive oil
- 1 sprig of rosemary
- 50 grams dry white wine
- 500 grams seafood stock
- Salt & Pepper
- 200 grams tomato sauce
- 1 tbsp parsley, finely chopped
- 1 garlic clove minced
Preparation
In a saucepan, heat the olive oil to sauté the onions, the garlic and the rosemary. Add the arrow squid cut into large strips and cook for 2 minutes longer.
Finish with wine; add in the tomatoes and the stock. Season with salt and pepper. Cook for about 20 minutes until the sauce is thick.
Finally, sprinkle with the parsley and stir.
