Ingredients (4 servings)

  • 700 grams Arrow Squid Whole Cleaned NZ
  • 400 grams pearl onions for stew, peeled
  • 30 grams olive oil
  • 1 sprig of rosemary
  • 50 grams dry white wine
  • 500 grams seafood stock
  • Salt & Pepper
  • 200 grams tomato sauce
  • 1 tbsp parsley, finely chopped
  • 1 garlic clove minced

Preparation

In a saucepan, heat the olive oil to sauté the onions, the garlic and the rosemary. Add the arrow squid cut into large strips and cook for 2 minutes longer.

Finish with wine; add in the tomatoes and the stock. Season with salt and pepper. Cook for about 20 minutes until the sauce is thick.

Finally, sprinkle with the parsley and stir.
