Ingredients (4 servings)
- 1 kg Arrow Squid Whole Round NZ
- 600 grams frozen peas
- 50 grams tomatoes in dices
- 100 grams onion, chopped
- 100 grams green onion, minced
- 50 grams of fresh coriander, finely chopped
- 50 grams green peppers, cut in thin strips
- 50 grams red peppers, cut in thin strips
- 20 grams lemon zest
- 50 grams lemon juice
- Salt & Pepper
- 50 grams frozen butter in cubes
- 40 grams olive oil
Preparation
Clean the arrow squid tubes and pull skin off. Open it up and season with salt and pepper.
In a pan, heat the olive oil to stir-fry the arrow squids for 2.5 minutes on each side. Remove from heat and cut them into thin strips.
In a pan, heat the olive oil and sauté the onion together with the green onion until they begin to soften. Add the peppers along with the tomatoes, peas and arrow squids and cook for about 4-5 minutes. Season with salt and pepper, pour in the lemon juice, adding lemon zest and coriander, and finish with the butter.
