Ingredients (4 servings)
- 800 g Blue Shark steak
- 1 tsp salt
- Juice of 1 lemon
- 50 grams olive oil
- 40 grams white wine
- 50 grams frozen butter in cubes
- 1/2 tbsp lemon zest
- 150 grams green onion, finely chopped
- 2 tsp red pepper in dices
- 1 tbsp dill
- 1 tbsp tarragon
- 200 grams seafood stock
Preparation
Drizzle the fish with oil, season with salt and tarragon, and sear it in the pan. Turn it over carefully from the other side adding again salt and tarragon. Finish with white wine and add half the amount of stock, pepper and green onion.
Remove the fish and finish in the oven. Pour the sauce in the pan adding the remaining stock, dill, tarragon and zest. Finish with the butter to thicken the sauce.
