Ingredients (serves 2):
– 1 pack of ATLANTIKOS mixed seafood
– 1 onion, finely chopped
– 1 red pepper, finely chopped
– 10 tbsps of olive oil
– 1 shot glass of tsipouro
– 1 cup of water
– the juice of half a lemon
– 1/2 tsp of oregano
– Salt
– Pepper
-1 cup of parboiled rice + 2 spoons of margarine
Method
– Wash the mixed seafood well and drain. Then pat dry with kitchen paper so that there is no water.
– In a saucepan, add the olive oil and then the finely chopped pepper and onion (pulsed in the blender). Sauté until golden brown and add the seafood mix. Sauté for half a minute, add the water, salt, pepper, oregano and let it boil over a low heat.
– Once it has reduced down, add the tsipouro and lemon juice.
– Boil the rice in accordance with the instructions on the packet.
