Preparation
– Wash the pieces of hake well and place in a bowl.
– Pulse the onion in the blender until it becomes a paste and place in a bowl. Add the salt, pepper, oregano, rosemary, olive oil, water and lemon juice.
– Place half the tomatoes in the bowl and cut the rest in half.
– Mix all the ingredients well and leave to marinade for an hour.
– After that time elapses, place the pieces of hake and the marinade stock in a roasting tray and cover with parchment paper.
NB: The rest of the tomatoes will be added halfway through the roasting process.
– Roast in a preheated oven at 180oC for around 45-50 minutes (depending on your oven). Once half the time has elapsed, slowly add in the cherry tomatoes. Be careful not to break the pieces of fish.
