Preparation
Preheat the oven to 180 degrees.
In a bowl, place the sliced vegetables along with the olive oil, salt and pepper, thyme and mix well. Then, place the vegetables in a baking tray.
Grease and season the fish and put the lemon slices and a little thyme in the belly cavities. Place the fish over the vegetables and top with the tomato slices.
Pour over the wine and some more olive oil. Bake for 45 minutes.
