Ingredients (4 servings)
- 2 packages of Seafood Cocktail MIX
- 600 grams egg noodles, boiled
- 20 grams curry powder
- 100 grams onion, finely chopped
- 100 grams green onion, finely chopped
- 50 grams fresh coriander, finely chopped
- 20 grams lime zest
- 50 grams lemon juice
- Salt & Pepper
- 50 grams frozen butter in cubes
- 40 grams olive oil
- 80 grams coconut milk
- 10 grams black sesame seeds
- 100 grams carrot in sticks
- 100 grams yellow pepper in sticks
Preparation
In a pan, heat the olive oil and sauté together the carrot, the onion and the fresh onion until they begin to soften, and then add the peppers. Add in the curry, stirring well for a minute and pour in the lemon juice.
Stir in the seafood (thawed), the coconut milk and season with salt and pepper. Leave for about 3 minutes to cook, add in the noodles and stir well.
Finish with the lime zest, coriander and sesame seeds and add the butter to thicken the sauce
