Ingredients

  • 4 Pollock fillets
  • 2 bunches flat-leafed basil
  • 2 tbsp pine nuts
  • 2 tbsp grated parmesan
  • 1 garlic clove
  • 4 tbsp olive oil
  • Salt, freshly ground pepper
  • 15 small round potatoes
  • 1 sprig of marjoram
  • Half bunch of fresh coriander

Preparation

In a blender, mix basil, pine nut, garlic, parmesan cheese, and olive oil, salt and pepper to make the pesto sauce. Marinate the fish into the pesto sauce and the chopped coriander. Bake in preheated oven at 200 degrees for 7 minutes.

For the garnish, wash the unpeeled potatoes and boil in salted water. When they are ready, halve and place them in the pan with some olive oil, salt, pepper and the marjoram leaves to brown them slightly.
