Ingredients (4 servings)
- 800 grams Vannamei shrimp, peeled and deveined
- 1/2 tsp garlic, minced
- 1 tbsp olive oil
- A few bukovo spice seeds
- 20 grams sweet white wine
- 100 grams tomatoes concassé (peeled and the seeds removed)
- 60 grams seafood stock
- 1/2 tsp tarragon
- 100 grams tomato sauce
- 1/2 tsp salt
- 20 grams frozen butter in cubes
- 1/2 tsp pepper
- Zest of half lime
- 1/2 tsp fresh tarragon
- 1 sprig of thyme
- 200 grams green and red peppers, cut into julienne strips
Preparation
In a frying pan, heat the olive oil along with the garlic and the bukovo spice. Add the peppers and sauté them.
Add in the tomatoes concassé and pour the wine. Stir in the stock and the tomato sauce, and season with salt and pepper.
Add in the shrimp and use the butter to thicken the sauce.
Then finish with lime zest and finely chopped fresh tarragon
