Atlantikos product needed for the recipe:

Ingredients (4 servings)

  • 4 Sole fillets
  • 3 tbsp olive oil
  • 1/2 tsp bukovo spice
  • 30 grams dry white wine
  • 200 grams tomato sauce
  • 160 grams vegetable stock
  • 1 tsp tarragon, minced
  • 160 grams cherry tomatoes, halved
  • Salt & Pepper
  • 50 grams butter
  • Zest of half lime
  • 5 grams parsley, finely chopped
  • 1 sprig of thyme
  • 1/2 tsp minced garlic

Preparation

In a pan, heat the olive oil along with the garlic and the bukovo spice. Add the tomatoes and sauté for a minute.

Finish with wine; add stock, tomato sauce, salt, and pepper. Add in the fish and cook for 4 minutes.

Thicken the sauce with butter and finish with zest, tarragon and thyme.
