Ingredients (4 servings)
- 4 Sole fillets
- 3 tbsp olive oil
- 1/2 tsp bukovo spice
- 30 grams dry white wine
- 200 grams tomato sauce
- 160 grams vegetable stock
- 1 tsp tarragon, minced
- 160 grams cherry tomatoes, halved
- Salt & Pepper
- 50 grams butter
- Zest of half lime
- 5 grams parsley, finely chopped
- 1 sprig of thyme
- 1/2 tsp minced garlic
Preparation
In a pan, heat the olive oil along with the garlic and the bukovo spice. Add the tomatoes and sauté for a minute.
Finish with wine; add stock, tomato sauce, salt, and pepper. Add in the fish and cook for 4 minutes.
Thicken the sauce with butter and finish with zest, tarragon and thyme.
