Ingredients serves 2:
For the cod you will need:
- 1 packet of lightly salted ATLANTIKOS Cod
- 1 teacup of flour
- 1 teacup of corn oil
For the garlic dip, you will need:
- 5 medium-sized potatoes
- 1 cup of olive oil
- 2 large cloves of garlic
- the juice of half a lemon
- 1 teaspoon of vinegar
- Salt
- Pepper
Preparation
– On the night before you plan to eat the meal, remove the cod from the freezer and place it in the refrigerator to thaw slowly.
– The following day, clean the potatoes well, wash and peel them and boil in plenty of water for about 45 minutes (depending on the potatoes).
– Once the potatoes are ready, add the olive oil, garlic cloves which have been cut into pieces, vinegar, lemon juice, salt and pepper to a blender and mix well until the garlic dissolves into the mix.
– Drain the water from the pot and mash the potatoes well with a potato masher or fork.
– Then add the mixture from the blender and mix well so that all the ingredients form asmooth paste.
– The next step is to rinse the cod well and press it gently by hand to remove all the excess water. Place the flour in a bag and add the cod pieces one by one. Close the bag well and shake so that the flour sticks well to the cod. Repeat for all cod pieces.
– Heat the corn oil in the pan and fry over medium to high heat on both sides.
